What’s For Breakfast? Chicken Chorizo Hash & Scrambled Eggs Recipe

Chicken Chorizo Hash

Ingredients:

1 lb Chicken Chorizo
2 Leftover Baked Potatoes (diced)
1 Bell Pepper (chopped)
Chopped Scallions
Salt & Pepper to taste

Instructions:

  1. Heat skillet to medium heat with your favorite cooking fat
  2. Crumble Chicken Chorizo Sausage into skillet and cook for approximately 6-7 minutes or until no pink remains.
  3. Turn heat up to medium high and add potatoes, chopped peppers, chopped scallions, and cook until browned.
  4. Serve with scrambled eggs

Cheesy Scrambled Eggs

Ingredients: 

6 Eggs
2 oz of Andrew and Everett American Cheese (or substitute US Wellness Meats’ Raw Cheese)
Salt & Pepper to taste

Instructions:

  1. Whisk together eggs, salt and pepper in a medium bowl until combined.
  2. Heat skillet to medium-low heat, add butter or favorite cooking fat.
  3. Stir in egg mixture and use a spatula to turn slowly. Cook for approximately 2-3 minutes or until ribbon like.
  4. Remove from heat and add cheese.
