USWM Lamb Meatballs

A true USWM lunchtime favorite is Abby’s Lamb Meatballs! This simple, versatile recipe is perfectly suitable for a sustainable and quick meal, ideal for any time of the day. These Meatballs utilize our US Wellness Meats Ground Lamb, raised on sustainable family farms dedicated to good stewardship with NO chemicals, NO added growth hormones, NO GMOs, and NO antibiotics. Serve over jasmine rice, organic noodles, or on top of a delish mixture of organic salad greens. No matter how you serve these meatballs, they will not disappoint!

USWM Lamb Meatballs

Ingredients:

  • 1 lb. USWM Ground Lamb
  • 1 teaspoon Riley’s Seasoning
  • 1 teaspoon Italian seasoning
  • 1-2 cloves of garlic, minced
  • ¼ – ½ teaspoon white pepper (white pepper has a bite!)
  • ¼ cup red onion finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • A splash or two of my Aunt Jenny’s spicy tomato juice (tomato juice is optional; I just love the added flavor)
  • Goat cheese for topping

Rarely do I use egg or breadcrumbs, but if you prefer that texture, add 1 egg and ¼- ½ breadcrumbs to your mixture. I find my meatballs stay together just fine without them!

Instructions:

  • Combine all ingredients in a bowl and use your hands to mix everything together.
  • Next, divide the mix into 10 parts, roll the lamb mixture into balls, and place them directly into your air fryer or infrared cooker. You could bake in the oven or cook in a skillet as well. I like to bake for 5 minutes at 400 and then reduce my temperature to around 325 for the remaining cooking time.
  •  Cook for 12-15 more minutes or until your desired doneness is reached. I prefer mine, just a touch under medium.
  • Top the meatballs, or if you were feeling creative in the beginning, stuff the meatballs with some goat cheese. I prefer to use honey goat cheese as it compliments the slight heat of the meatballs.

I often pair my lamb meatballs with roasted vegetables and jasmine rice or simply top off my favorite salad mix for some added protein. These meatballs are quick easy, and pair very well with your favorite side dishes! – Abby
