Unstuffed Pepper Skillet Recipe

USWM Shopping List: Ground Bison
Ingredients:
- 1 lb ground bison
- 2 bell peppers (red, yellow, orange)
- 1 onion
- 2 Tablespoons extra virgin olive oil
- 2 Tablespoons ketchup
- 1 can tomato sauce (16 oz.)
- 1 bag cauliflower rice
- 1 tbsp Italian seasoning
- ½ tsp cumin
- ½ tsp paprika
- 1 teaspoon oregano
- 2 teaspoons salt
- 1/4 teaspoon pepper

Instructions:
- Dice the onion and place it into a skillet with extra virgin olive oil (heated for 1-2 minutes). Continue to cook on high heat until the onions are translucent. Cut the pepper into small pieces and set aside.
- Once the onions are translucent, add the ground turkey to the skillet and continue to cook on high heat until browned.
- Add the cauliflower rice to the skillet and continue to cook on high heat until it is defrosted about 4 minutes. Add the tomato sauce, ketchup, oregano, salt, pepper, and remaining seasoning.
- Add sliced peppers to the skillet and stir together. Continue to cook on medium heat for 10 minutes until the sauce thickens and the peppers are tender.
