The Simplest Enchiladas Ever

US Wellness Meats Shopping List: Pastured Ground Turkey, Raw Cheese
Ingredients for Enchiladas:
- 2 – 15 oz Siete green enchilada sauce jars (or homemade)
- 8-12 fresh corn tortillas
- 2 cups cooked beans (I use pinto)
- 1 lb cooked ground turkey
- 1 tsp garlic powder
- Sea salt & pepper to taste
- 5 heirloom potatoes, sliced and sauteed
- 4 cups shredded raw cheese
- Sour cream (topping)
- Cherry tomatoes (topping)
Instructions for Enchiladas:
- Preheat oven to 350 degrees.
- Saute the sliced baby potatoes in a cast iron skillet with a little olive oil.
- Remove potatoes and then add ground turkey to skillet.
- Season with garlic powder, sea salt, and pepper.
- Brown ground turkey and allow to cool in the skillet.
- Start assembling the enchiladas by first coating an 8x8in glass cooking dish with green enchilada sauce.
- Add tortillas, meat, and potatoes.
- Top with shredded cheese, then add another layer, starting with the enchilada sauce. Keep layering, and then top with more shredded cheese.
- Bake for 20-30 minutes.
- Top with sour cream and cherry tomatoes. Enjoy!
