The Simplest Enchiladas Ever

US Wellness Meats Shopping List: Pastured Ground Turkey, Raw Cheese

Ingredients for Enchiladas:

  • 2 – 15 oz Siete green enchilada sauce jars (or homemade)
  • 8-12 fresh corn tortillas
  • 2 cups cooked beans (I use pinto)
  • 1 lb cooked ground turkey
  • 1 tsp garlic powder
  • Sea salt & pepper to taste
  • 5 heirloom potatoes, sliced and sauteed
  • 4 cups shredded raw cheese
  • Sour cream (topping)
  • Cherry tomatoes (topping)

Instructions for Enchiladas:

  1. Preheat oven to 350 degrees.
  2. Saute the sliced baby potatoes in a cast iron skillet with a little olive oil.
  3. Remove potatoes and then add ground turkey to skillet.
  4. Season with garlic powder, sea salt, and pepper.
  5. Brown ground turkey and allow to cool in the skillet.
  6. Start assembling the enchiladas by first coating an 8x8in glass cooking dish with green enchilada sauce.
  7. Add tortillas, meat, and potatoes.
  8. Top with shredded cheese, then add another layer, starting with the enchilada sauce. Keep layering, and then top with more shredded cheese.
  9. Bake for 20-30 minutes.
  10. Top with sour cream and cherry tomatoes. Enjoy!
