Thai Peanut Zoodles With Curry Meatballs Recipe

Have you noticed the increased interest in Thai food? There seems to be a growing attraction. Well, here’s a relatively quick dish that offers the combination of grass-fed beef and Thai flavors that is sure to impress. Zoodles has also become a great alternative to pasta. Give this Thai Zoodles recipe a chance and you may find yourself falling head over heels for Thai food too.

Thai Zoodles

Ingredients

For the Meatballs:
  • 1 pound Grass-fed Ground Beef
  • 1 teaspoon curry powder
  • ½ teaspoon ground turmeric
  • 1 tablespoon chili paste
  • 1 teaspoon pepper
  • ¼ teaspoon salt
  • 1 inch ginger, grated
  • 1 clove garlic, grated
  • 1 tablespoon onion, grated

 

For the Thai Zoodles:
  • 4 zucchini squash, spiralized OR 2 packages of zucchini noodles
  • 1 tablespoon natural peanut butter
  • ¼ cup powdered peanut butter
  • ¼ cup coconut aminos
  • ¼ cup water
  • 1 tablespoon chili paste
  • 1 tablespoon hoisin sauce
  • 2 tablespoons sesame oil

 

Method

  1. Heat oven to 400 degrees and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, combine all meatball ingredients. Using a cookie scoop or tablespoon, measure scoops of the mixture into your palm and roll into meatballs.
  3. Place onto prepared cookie sheet and bake 15–18 minutes or until cooked through.
  4. In a personal-sized blender, add in all zoodle ingredients except the zucchini noodles. Blitz to combine.
  5. Heat a medium-sized skillet over high heat. Add in zucchini noodles and sauce. Toss to combine and cook until sauce has thickened and noodles have slightly softened.
  6. Serve with meatballs and top with chopped peanuts, lime and cilantro.
