USWM Shopping List: Sugar-Free Bacon Slices

Ingredients:
- 2 large, organic sweet potatoes
- 5 strips USWM bacon
- 2 cups Tuscan Kale
- 2 Bell peppers
- ¼ cup chopped Green onions
- 3 eggs
- Simply Organic Dill Seasoning
Directions For Sweet Potato Hash:
- Place strips of bacon in skillet, once fully cooked remove from skillet
- Cut up sweet potatoes and veggies, mix and place in skillet
- Put stove on medium/high until sweet potatoes are softened (12-15 min)
- Preheat oven to 425
- Once sweet potatoes & veggies are soft, cut up bacon and mix in with the rest
- Crack eggs on top of everything and place in the oven
- Check occasionally until eggs are cooked to preference
