STEAK TACOS with CHILI CON QUESO

TACO INGREDIENTS
- 1 LB Skirt or Flank Steak
- 1 Teaspoon Chipotle Powder
- 3/4 Cup Coconut Aminos
- 1.5 Teaspoons Garlic Powder
- 1 Tablespoon Cumin
- 1 Teaspoon Himalayan Pink Salt
- 1/4 Cup Lime Juice
- 1/2 Teaspoon Onion Powder
- 1/2 Tablespoon Chili PowderÂ
TACO ASSEMBLY
- In a large mixing bowl, add all of the ingredients to create a marinade.
- Marinate the steak for 24 hours for extra tenderness.
- Preheat grill on high heat, roughly 550° Fahrenheit.
- Place the steak on the grill for 4 minutes, flipping only once, then grill for an additional 3 minutes on the other side for a medium rare steak.
- Adjust cooking time based on personal preference.
- Set aside for 10 minutes to let the steak collect its juices. Do not cover.
- Thinly slice and serve with your favorite taco toppings, chili con queso, and tortillas!

CHILI CON QUESO INGREDIENTS
- 2 Cups of Heavy Cream
- 4oz Full-Fat Plain Cream Cheese
- 2 Cups Shredded Raw Cheddar
- ½ LB Ground Beef
- ½ Tablespoon Chili Powder
- ÂĽ Teaspoon Paprika
- ½ Teaspoon Himalayan Pink Salt
- ÂĽ Teaspoon Garlic Powder
- 1/8 Teaspoon Onion Powder
- ÂĽ Teaspoon Coriander
- Âľ Teaspoon Cumin
- ½ Cup Salsa – No Sugar Added
- Âľ Cup Red, Yellow or Orange Bell Peppers Diced
- 2 Tablespoons Fresh Cilantro Chopped
CHILI CON QUESO ASSEMBLY
- In a medium-sized frying pan, add the ground beef.
- Brown the ground beef over medium-low heat.
- In a small bowl, combine all of the seasonings.
- Add the seasonings and the salsa to the ground beef. Mix well until fully combined.
- In a medium-sized saucepan, add the heavy cream. Heat on low until the cream is hot.
- Add the cream cheese and whisk until melted and fully combined.
- Add the shredded cheese and mix until melted and fully combined.
- Add the ground beef mixture and the bell peppers. Mix well until heated through and fully combined.
- Add the cilantro and serve.
- Enjoy!
