Spring Stuffed Acorn Squash – Warming & Nourishing

US Wellness Meats Shopping List: Ground Beef – 1 lb.
Ingredients:
- 4 small acorn squash
- 4 tbsp extra virgin olive oil
- sea salt & pepper
- 1 lb ground beef
- 1 tsp garlic powder
- 1 tsp dried basil
- 2 tsp onion powder
- 1 cup mushrooms, chopped
- 1 large apple, chopped
- 1 cup spring peas
- 4 tbsp goat cheese
- 1/4 cup parsley, chopped
- parsley to sprinkle

Instructions:
- Roast the acorn squash. Preheat the oven to 400°F. Line a large baking sheet with parchment paper. Drizzle oil on each squash and sprinkle with sea salt and pepper. Arrange the squash halves, cut side down, on the baking sheet. Bake for 30 minutes, or until the squash is fork tender.
- While the squash is roasting, make the filling. Heat a large skillet over medium-high heat. Add olive oil and ground beef. Break up the meat until it is almost fully cooked.
- Stir in garlic powder, mushrooms, apple, and peas. Cook until done.
- Add sea salt and pepper as needed.
- Stuff each acorn squash with meat veggie mixture, top with goat cheese, and sprinkle with parsley.
- Bake for another 15 minutes until cheese has fully melted. Enjoy!
