Smoked Salmon Dip with Raw Veggie Chips
This Smoked Salmon Dip combines luxury with ease. Gluten-free and Paleo-friendly, it’s made with a base of cashew cream, a hint of lemon, and fresh dill. Serve it with crudités (sliced or whole veggies) and you’ve got one amazing appetizer!
For those of you who love the taste of smoked salmon and cashews, you’re in for a real treat! This creamy, dairy-free dip is light and satiating. Better yet, it requires very little hands-on time, and no cooking at all.
To create an amazing appetizer or light summer meal, simple serve this dip with sliced cucumbers, carrots and radishes, but you can also use any other type of veggies that you prefer!
Start off by soaking the cashews in hot water for an hour until they are slightly soft. Once soaked, drain them and rinse with water before transferring them to a food processor or blender and processing them with water. Pulse until you get a thick, rich mixture. Mince the salmon as finely as you can. Transfer the cashew cream into a bowl and mix in lemon juice, fresh dill, salt, black pepper, and smoked salmon. Stir well to combine, then garnish with fresh dill, serve with crudités and enjoy!

Yield: 2 servings
Ingredients
1 cup cashews, soaked for at least 1 hour in hot water
½ cup water
1 T fresh lemon juice
1 T minced fresh dill + more for garnishing
½ t salt
¼ t freshly ground black pepper
¼ pound smoked salmon
1 cucumber, sliced
1 carrot, cut into matchsticks
1 cup radish halves
How to Make It
- Soak the cashews in hot water for at least 1 hour. Drain and rinse with water.
- Placed soaked cashews and ½ cup water in the bowl of an electric blender. Blend until you get a thick and creamy mixture.
- Use a knife to mince the smoked salmon as finely as possible.
- Transfer the cashew cream to a bowl and mix in lemon juice, fresh dill, salt, black pepper, and minced smoked salmon.
- Garnish the smoked salmon dip with fresh dill and serve with sliced cucumbers, carrot sticks, and radishes.
