An easy, slow-cooker beef chili recipe, with super simple ingredients! The simple ingredients give this chili that super traditional taste! No bells or whistles here! Just a few ingredients allow the flavors to really come through! What’s great about this recipe, is that you can prep the ingredients ahead on your meal prep day, so it can make for a super easy weeknight meal! Slow cooker meals are great for weeknight dinners, because you do the prep ahead, you can just throw everything in and go!

Slow Cookers are great for weeknight dinners! If you prep the ingredients ahead, then you can just dump them in and let the slow cooker go. Remember always to follow safety and directions when it comes to using the slow cooker. I often put this easy slow cooker beef chili into my weeknight meal rotation. I do all of my food prep on Sundays.

When I am planning this Slow Cooker Beef Chili as a weeknight meal, I prepare the ingredients on Sunday! I brown the meat and onions, I dice the onion, and even measure the spices into a Ziploc! You can store everything in the meat and veggies in the fridge and then throw them in the slow cooker during the week! The nice part about this Chili is that most of the ingredients are “dump and go”! Sometimes I add diced green pepper and celery. If I decide to do this, I also chop these ahead on Sunday, so I can just dump them in! I also dice and store any toppings I may want to add to the chili, such as green onion, yellow onion, etc..!

Ingredients:

  • 2 lbs grass-fed Ground Beef
  • 1 large onion – chopped
  • 2 cans of 10-oz condensed tomato soup
  • 2 10.5-oz cans of diced tomatoes
  • 1 cup water
  • 1 to 2 cans light pink kidney beans (red kidney beans work fine too) (based on preference)
  • 1/3 cup chili powder
  • 2 TBSP ground cumin
  • 1 TBSP garlic powder
  • salt & pepper to taste

Instructions:

  1. Cook beef and 1/4 of the diced onion until onion is soft and beef is browned.
  2. Pour off any fat.
  3. Mix beef, onion, garlic, soup, tomatoes, water, beans, chili powder, garlic powder and cumin in crock-pot slow cooker.
  4. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours or until done.
  5. After the slow cooking is done, stir and season with salt and pepper to taste. If desired, add more chili powder or cumin. Add in small increments until you get the flavor where you want it!
