Roasted Chicken and Stuffing Dinner Recipe

Rarely have we encountered a Roasted Chicken recipe that includes the words ‘carnivore’ and ‘stuffing,’ so when this recipe came to us from our November 2024 Featured Chef, Terri Haas, our ears immediately perked up. Your ears should perk up, too, as this dish is chock-full of flavor and protein. It’s perfect for your next holiday get-together or family meal. We hope you share our excitement when we say you can have your bread and eat it, too!

US Wellness Shopping List: Whole Chicken, Unsalted Butter, Chicken Broth

Roasted Chicken Ingredients

Chicken Instructions

  1. Generously spray chicken with tallow spray. Or melted butter. Add salt, liberally.
  2. Roast, facing up, in a covered cast iron Dutch oven for 1 and 1/2 hours at 400°F/204°C.
  3. Remove the lid and bake for an additional 15 minutes or so to get the skin golden and crispy.

Carnivore Stuffing Ingredients

  • 300g/1/3 of a loaf of my MSB, cubed
  • .5g/1/4tsp dried celery seed
  • 1.75g/2tsp onion powder
  • .7g/1/3tsp poultry seasoning
  • .25g/1tsp dried sage
  • .5g/1/3tsp dried thyme
  • 28g/2T unsalted butter
  • 240g/1C chicken broth

Instructions for Carnivore Stuffing

  1. To dry out MSB cubes, heat the oven to 170°F/77°C.
  2. Lay flat on a cooking sheet and bake for about 90 minutes-2 hours+, until crispy and dried. Alternatively, you can use the dehydrator. This works much better.
  3. Preheat oven to 375°F/191°C.
  4. Add butter and spices in small pot and mix while butter melts.
  5. Place bread cubes in a large bowl.
  6. Add spice mixture and lightly toss.
  7. Add chicken broth and toss gently until well mixed.
  8. Bake for 45 minutes or until heated through and lightly browned.

Ingredients for MSB (Modified Soul Bread) Carnivore Bread

  • 180g/1 2/3C whey protein powder
  • 400g/14oz farmer or ricotta cheese
  • 130g/1/2C softened, unsalted butter
  • 4 eggs
  • 3g/1 1/4tsp xanthan gum
  • 5.1g/1tsp glycine
  • 3g/3/4tsp cream of tartar
  • 12g/2.5tsp baking powder
  • 3g/1/2tsp baking soda

Instructions for MSB (Modified Soul Bread) Carnivore Bread

  1. Preheat oven to 325°F/165°C.
  2. Bring cheese and butter to room temperature to soften.
  3. Gather all ingredients. I pre-measure for quick assembly.
  4. Measure protein powder and set aside. Measure baking soda, baking powder, xanthan gum, and cream of tartar to use later in the recipe.

In a large bowl…

  1. To your softened cheese, add butter and glycine. Using an electric mixer, mix well.
  2. Add in one egg at a time, 4 total.
  3. Mix well after each.
  4. Add remaining leavening ingredients.
  5. Pour protein powder over wet ingredients and gently stir by hand, lightly fold together. Do not overmix.
  6. Pour into loaf pan and bake for 45 minutes.
  7. Remove from oven and rest 5 minutes on alternating sides on a cooling rack for about 15 minutes.
  8. Remove from pan and allow to cool fully.
  9. Slice when all the way cool.
  10. Place parchment paper between each slice.
  11. Store in an airtight container on the counter for a few days. In the fridge for up to a week. In the freezer, a very long time.
