USWM Shopping List: Beef Chuck Roast, Bone Broth or Bones for a Homemade Broth
Ingredients
- 3 lb. Beef Chuck Roast
- Salt & Pepper
- 4-5 Tbsp Oil for searing the meat and sautéeing the vegetables
- 2 whole carrots, chopped
- 1 onion, chopped
- 2 Tbsp fennel
- 3 cups homemade bone broth or premade bone broth
- ¼ cup Tbsp Worcestershire sauce
Instructions
- Preheat oven to 275°F ~ cooking low and slow gives it the fall apart texture we want.
- On the stovetop, heat oil in a dutch oven over medium-high heat.
- Season all sides of the chuck roast with salt and pepper and add it to the pot and sear 3-4 minutes on each side to lock in juices and flavor.
- Remove the roast for a couple of minutes as you add oil and vegetables of your choice. Carley prefers carrots, onions, and chopped fennel (great for digestion and has a nice turnip or cabbage flavor when cooked that compliments the roast well).
- Sautée the vegetables until they begin to sweat, and then remove them from the Dutch Oven and back into their original bowl.
- Deglaze the pan: turn the stovetop heat down to medium and add 3 cups of bone broth to the pan (see Carley’s Beet and Sweet Potato Bone Broth Recipe for earthy and sweet flavor).
- Turn the heat to high and whisk in Worcestershire sauce, add back the vegetables, and place the round roast back in the pan and settle it among the veggies, pushing them up around the sides.
- Top with a few springs of rosemary and thyme, cover the pot and transfer to the oven for 3-4 hours at 275°F.
- Enjoy your sweet and tender roast!
