Oven Roasted Rosemary Duck Leg Quarters with Potatoes Recipe

US Wellness Meats Shopping List: Pasture-raised Duck Leg Quarters

Side Salad Ingredients:

Chopped Cucumbers

Chopped Tomatoes

Favorite Greens for Salad

Side Roasted Potatoes Ingredients:

several medium sized potatoes

Scallions

Labne (Middle Eastern Yogurt)

Main Course Ingredients:

2 lbs – Pasture-raised Duck Leg Quarters from US Wellness Meats

Rosemary

Oregano

Salt

Pepper

Instructions:

  1. Preheat oven to 300 degrees.

  2. Season Duck Quarters with Rosemary, Oregano, Salt, and Pepper in a baking dish.

  3. Roast at 300 degrees for about an hour and a half.

  4. Remove from baking dish and place in air fryer on a roasting grate on the top shelf. (Note: You can also use a iron or stainless steel skillet for this step. Pasture-raised duck is leaner than conventionally raised, so you may need to add some olive oil, avocado oil, tallow or duck fat to the skillet)

  5. Any remaining drippings from the roasting dish should be drizzled over the Duck Quarters.

  6. Slice Potatoes in half and place on a roasting tray. Put the tray of potatoes on the bottom rack of the air fryer so the drippings from the Duck Legs coat the potatoes with deliciousness.

  7. Cook in air fryer or skillet for 4 to 5 minutes at 400 degrees.

  8. Garnish potatoes with scallions and yogurt.

  9. Plate salad, potatoes, and Duck Legs, serve and enjoy!
