Post Partum Beef Stir Fry

A Nourishing Beef and Veggie stir-fry is a postpartum powerhouse meal. Packed with iron-rich beef, it helps replenish blood loss and combat fatigue, while colorful vegetables provide essential vitamins, fiber, and antioxidants to support healing and immune function. The healthy fats and proteins aid in tissue repair and milk production, making it a balanced, energizing dish for new moms.

US Wellness Meats Shopping List: 1 lb. Ground Beef 

Ingredients: 

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic, chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1/3 cup Kalamata olives, sliced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin 
  • 1/2 tsp paprika
  • sea salt & pepper to taste
  • 1/3 cup crumbled feta cheese
  • 2 tbsp fresh dill, chopped
  • 1 lemon, juiced
Megan Limon Stir Fry

Directions:

In a large skillet, heat olive oil over medium heat. Add chopped garlic and ground beef. Cook until browned. Mix in zucchini, bell pepper, and olives. Cook until the vegetables soften. Add spices, stir well, and cook for another 3-5 minutes. Remove from heat and mix in crumbled feta cheese, fresh parsley, and dill. Before serving, squeeze lemon juice on top of the stir-fry. Enjoy!
