Attention all oatmeal raisin cookie lovers! These chewy n’oatmeal raisin cookies are the perfect treat to satisfy your craving for something sweet and just the right amount of chewy. They are incredibly easy to make and require only a few simple ingredients. Instead of oats, these cookies use unsweetened raisins and sliced tiger nuts, making them both 100% AIP compliant and 100% delicious.

USWM Shopping List: USWM 100% Grass-Fed Beef Tallow
Ingredients:
- 50g tallow (melted)
- 50g sustainable palm shortening (melted)
- 1 and 1/2 tbsp molasses
- 2 tbsp olive oil
- 2 tbsp unsweetened applesauce
- 2 tbsp maple syrup
- 85g maple sugar
- 1 tbsp gelatin
- 150g tiger nut flour (about and 1/4 cups)
- 75g sliced tiger nuts (just under 1 cup)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp cream of tartar
- 150g of unsweetened raisins
Directions:
- Preheat oven to 325 degrees Fahrenheit
- Combine wet ingredients (tallow, palm shortening, molasses, olive oil, apple sauce, and maple syrup) in a large mixing bowl
- Combine dry ingredients (maple sugar, gelatin, tiger nut flour, sliced tiger nuts, salt, baking soda, cream of tartar, raisins) in a separate large mixing bowl
- Pour wet ingredients into dry ingredients and mix until fully combined
- Line a baking sheet with parchment paper
- Form 12 dough balls about 2 inches across in diameter, and place them a few inches apart
- Bake at 325 degrees Fahrenheit for approximately 20 minutes
- Allow the cookies to cool to room temperature before transferring them from the baking sheet
