Mustard Roasted Chicken Legs or Thighs

Ingredients:
- 4 whole chicken legs or 6 bone-in chicken thighs – season with salt and pepper
- 1/2 cup Dijon mustard
- 3 tbsp fresh thyme
- 3 grated garlic cloves
- 1 small shallot minced
- 1 tbsp fresh sage
- 1/4 cup olive oil
- 3 cups of your favorite potatoes and veggies
Instructions:
- Mix mustard, thyme, garlic, shallot, and sage together,r then massage all over the chicken and under the skin.
- In a baking dish, mix veggies with 2 tbsp olive oil and season with salt and pepper.
- Place a baking rack on top of the veggies and arrange the chicken over the top.
- Drizzle chicken with olive oil and bake at 425 for 30 minutes or until chicken is cooked and crispy!
