US Wellness Meats Shopping List: 100% Grass-fed Ground Beef

Ingredients:

  • 1 lb grass fed grass finished beef
  • 1 tbsp olive oil
  • 1 cup chopped eggplant
  • 2 portobello mushrooms chopped
  • 1/2 red onion, diced
  • 2 garlic cloves, grated
  • 1/4 cup fresh herbs (I used parsley and oregano)
  • 1 tbsp salt
  • pinch Aleppo pepper (optional)
  • additional olive for cooking
85% Lean Ground Beef

Instructions:

  1. Heat oil in a skillet over medium heat.
  2. Add eggplant, mushroom, and onion, cook for 5-6 minutes until they begin to caramelize, and season with 1 tsp salt. Remove from the heat and allow to cool.
  3. Once cooled, break up ground beef into a bowl and add the cooked mushroom mixture, garlic, remaining salt, and herbs. Mix until combined, but do not over-mix. You don’t want to toughen the meat.
  4. Roll into 8-10 meatballs. Place on a baking sheet and place in the fridge for 30 minutes.
  5. When ready to cook, add oil about 2-3 tbsp to a skillet and add meatballs. Cook for about 3-4 minutes per side or until cooked through.
  6. Serve with your favorite sauces and veggies!
