Maple Mustard Pork Chops with Roasted Apples Recipe

These maple mustard pork chops are seared to perfection and finished in a sweet and savory pan sauce with apples and onions. It’s a cozy, flavorful dish all made in one skillet for an easy, delicious dinner.

 Ingredients

  • 4 – 6 oz Fresh Cut Pork Chops
  • 1 teaspoon ground sage
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 T. Dijon mustard, divided use
  • 3 T. avocado oil, divided use
  • 1 medium sweet onion, sliced thinly
  • 1 medium Granny Smith apple, sliced thinly
  • ¼ c. maple syrup
  • 1 c. chicken stock or broth

 Instructions

  1. Preheat a large skillet over medium heat on the stovetop.
  2. Season the pork chops on both sides with the sage, salt, and pepper.
  3. Use half of the Dijon mustard and spread a thin coating on each side of the pork chops.
  4. Add the 2 Tablespoons of avocado oil to the skillet and brown the pork chops on each side for 2-3 minutes. Remove to rest on a plate.
  5. Add the remaining oil, along with the sliced onions and apples, and sauté for 3-4 minutes, until they soften and start to caramelize.
  6. Deglaze the pan with the chicken stock, scraping the bottom to remove any stuck-on bits. Whisk in the maple syrup and the remaining mustard, and reduce the heat slightly.
  7. Add the pork chops back to the pan, scooping the apples and sauce on top. Let them cook in the sauce for a couple of minutes, until the sauce has reduced slightly and the pork reaches an internal temperature of 145˚F.
