Giddy up cowboy, this recipe is sure to knock off your boots! usually chili is a strict winter only meal for me, but this fun recipe can even be enjoyed during the summer months. While the waffles are delicious, you could also serve the cowboy chili over roasted veggies, potatoes, or even with a good ole tortilla chip.
Our September 2024 Featured Chef, Erica Tangeman, shares this authentic Cowboy Chili recipe for those days when a good Western cowboy flick and a pot of chili is the only thing that will take the chill off of a cool winter’s night.
Loaded Green Chile “Cornbread” Waffles + Cowboy Chili Recipe

USWM Shopping List: 85% Lean Ground Beef, Grass-fed Jalapeno Cheese, Beef Liver, Sugar-free Pork Bacon
Serves: 6-8

Ingredients – Green Chili “cornbread” Waffles
- 12 oz Frozen Cauliflower Rice
- 1/4 cup Original Nut Crumbs, or almond flour
- 2 Tbsp Coconut Flour
- 2 Tbsp Nutritional Yeast
- 2 Tbsp ground Psyllium husk
- 2 Tbsp Lakanto Classic Monkfruit Sweetener (with Allulose)
- 1 tsp Baking Powder
- 1/4 Tbsp Redmond Real Salt
- 2 Eggs
- 4 oz Fire Roasted Green Chiles
- 1/4 cup Water
- 1/2 cup Pepper Jack Cheese, shredded
Ingredients – Cowboy chili
- 10 oz Frozen Bell Pepper and Onion Blend
- 1 lb US Wellness Meats Ground Beef (85% Lean),
- 1 lb Beef Liver, ground or chopped, (option to do more ground beef, less liver, but 2# total)
- 4 – 8 slices Sugar-free Pork Bacon
- 1 whole Unsweetened Ketchup (Primal Kitchen)
- 2 Tbsp Dijon Mustard
- 1/4 cup Lakanto Golden Monkfruit Sweetener
- 1 Tbsp Apple Cider Vinegar
- 1 1/2 tsp Smoked Paprika
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 Salt and Pepper, to taste
- 1/2 cup Water
- 1 cup Pepper Jack Cheese, for serving
Instructions – Green Chile “cornbread” waffles:
- Microwave cauliflower rice for 4-5 minutes.
- Allow cauliflower rice to cool, then place in a cheese cloth & drain as much water as you can from the cauliflower rice.
- To a bowl mix dry ingredients together by adding nut crumbs, nutritional yeast, psyllium husk, coconut flour, lakanto, baking powder, & sea salt.
- To a separate bowl mix wet ingredients together by whisking together eggs, greek yogurt, green chiles, & water.
- Add cauliflower rice & liquid ingredients to dry ingredients.
- fold in cheese.
- Allow batter to sit for 5-10 minutes to thicken – if too thick, add a couple more tablespoons of water.
- Heat a waffle iron & grease with a little butter or oil.
- Add ~½ cup batter into waffle-iron.
- Cook until waffles are crisp, ~3-4 minutes.
Instructions – Cowboy chili:
- In a large pot, sauté onion & peppers.
- Transfer veggies to a plate, then add meat to pan & brown.
- Once meat is fully cooked, add veggies, bacon, & beans to meat.
- In a small bowl, whisk together ketchup, mustard, sugar, ACV, & seasonings.
- Add sauce mixture & water to meat mixture.
- Bring to a boil, then reduce to a simmer for 10-15 minutes.
- To serve, first add a waffle to a plate, then load on cowboy chili & sprinkle cheese, Greek yogurt, or any other toppings on top.
