US Wellness Meats Shopping List: Raw Cheddar Cheese, 75% Lean Ground Beef

Ingredients

• 16 oz ground beef Add to Cart

• 4 medium bell peppers (or ~2.5 lb mini peppers)

• 8 oz microwaveable rice pouch (or any cooked rice)

• 8 oz shredded cheddar or Mexican-blend cheese Add to Cart

• Salt and pepper, to taste

• 1 tbsp oil

• Chopped scallions or fresh herbs (optional)

Instructions

1. Preheat the oven to 350°F and lightly spray a baking sheet with oil.

2. Cook the rice according to package directions.

3. Heat a skillet over medium and add 1 tbsp oil. Add the ground beef and sauté for a few minutes until mostly cooked through. Season to taste.

4. Stir in the cooked rice and cheese until the cheese melts. Remove from heat.

5. Slice each pepper in half lengthwise and remove the seeds. Fill each half with the beef mixture.

6. Top with extra cheese and optional scallions or herbs.

7. Bake for 12–15 minutes, or until the peppers are tender. Serve warm!
