Loaded Burger Soup Recipe

This cheesy ground beef and potato soup is the kind of one-pot wonder that brings everyone to the table. Packed with tender vegetables, savory beef, and a rich, creamy broth, it’s a satisfying meal that feels like a hug in a bowl.

Whether you’re feeding a hungry crowd or just craving something cozy, this recipe delivers big flavor with minimal fuss. The cheddar melts into the broth for a velvety finish, while optional sour cream and scallions add a fresh, tangy kick. It’s rustic, filling, and perfect for those nights when you want something simple but soul-soothing.

Ingredients

  • 1 lb. Ground beef
  • 4 cups peeled and chopped Potatoes
  • 1 yellow Onion finely chopped
  • 1 cup thinly sliced Carrots
  • 4 Garlic cloves minced
  • 1 cup thinly sliced Celery
  • 1 large pepper diced
  • 32 oz Chicken broth
  • 8-12 oz Cheddar cheese
  • 3 Tbsp Butter
  • 1/4 cup Flour
  • 1 1/2 cups half & half or milk
  • Optional, Sour cream and scallions to top
  • Salt & Pepper per taste

Instructions

1. In a large soup pot, over medium-high heat, add peppers, carrots, celery, onion, salt, and pepper.

2. Sauté for a couple of minutes and add ground beef. Cook until almost cooked through (slightly pink).

3. Add flour, mix well for 1-2 minutes.

4. Add the chicken broth, half & half and chopped potatoes. Bring to a boil and then cover with a lid, reduce heat to medium, and let simmer for 10-15 minutes or until potatoes are tender.

5. Add shredded cheese, and season per taste. Stir together until cheese is melted. About 5 minutes. 6. 6. Take off the heat and stir in the sour cream and scallions.
