I used to love eating Mom’s homemade lasagna as a kid. However, now that I’m keto, there is no room for traditional noodles in my diet. It’s a good thing all the flavor in lasagna comes from the filling itself, not from the noodles. This lasagna stuffed chicken recipe totally hits the spot and I don’t have to worry about all the carbs! This particular recipe is higher in protein than fat so I would recommend balancing it out with an additional fat source.
Lasagna Stuffed Chicken

INGREDIENTS:
- ½ C ricotta cheese
- 2 lbs chicken breast
- ½ C. parmesan cheese
- 1 egg
- 6 oz tomato pesto
- 4 oz cheese on top (Mozzarella, Colby Jack)
- Seasonings as desired
INSTRUCTIONS:
- Butterfly your chicken breasts
- Fill the breast cavity with the pesto sauce
- Mix together the ricotta cheese, 1/2 of the parmesan cheese, the egg, and some seasonings
- Add the ricotta mix to the chicken breast cavity
- Close the butterflied chicken breasts and add remaining pesto and cheeses on top as well as any desired seasonings
- Bake at 400 degrees for 35 min.
- Enjoy!!!
