Ingredients:
2 lbs grass-fed boneless beef short ribs (from US Wellness Meats)
6 Med. Red Potatoes cut into chunks
4 Carrots cut into chunks
3 stalks of Celery cut into chunks
2 green onions chopped
3 garlic cloves minced
2 tbsp tomato paste
Italian Blend Seasoning (Basil, Oregano, Rosemary, Thyme)
1/2 c red wine
1 c beef broth
2 tbsp Arrowroot Flour/Powder (thickener)
2 tbsp Olive oil
1/4 c butter
Salt & Pepper
Instructions:
- Sear the short ribs on both sides in a deep cooking dish with a lid or Dutch Oven.
- Add remaining ingredients and braise in oven or on grill at approx. 350 deg. for 3 to 3.5 hours. Make sure you have enough liquid (broth, wine, water) to cover the ingredients.
