Huevos Rancheros Casserole Recipe

This delightful Mexican-inspired breakfast Huevos Rancheros casserole is the perfect dish to add a little pep to your step. It features a flavorful combination of traditional spices such as paprika, chili powder, and chilis, making it a surefire way to start your day with a delicious bang!

Huevos Rancheros Casserole

USWM Shopping List: Raw Pepper Jack / Jalapeno Cheese, Ground Turkey

Serves: 6
Prep Time: 30 min
Cook Time: 30 min

Ingredients: 

  • 1 lb Ground Turkey
  • 10 oz Rotel Diced Tomatoes & Green Chilies (Original), 1 can

Chorizo seasoning Ingredients:

  • 1 Tbsp Apple Cider Vinegar
  • 2 tsp Smoked Paprika
  • 2 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp dried Oregano
  • 1 tsp ground Coriander
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Ground Cinnamon
  • 1 Salt and Pepper, to taste

Casserole Ingredients: 

  • 12 oz Frozen Bell Pepper and Onion Blend
  • 12 oz Frozen Cauliflower Rice
  • 8 whole Cassava Flour Tortillas (Siete)
  • 15 oz Refried Beans, (Siete)
  • 1/2 cup Pepper Jack Cheese, shredded
  • 6 whole Eggs

For serving

  • 1 Avocado
  • 1 Cotija Cheese
  • 1 Cilantro
Huevos-Rancheros-Casserole

Instructions:

  1. Preheat oven to 400.
  2. Add ground meat to a skillet & brown.
  3. Once meat is cooked, add diced tomatoes/green chiles, & chorizo seasonings to make “chorizo” meat.
  4. Once meat is finished cooking, add peppers, onions, & cauliflower rice to a skillet; cook for 6-8 minutes to sauté.
  5. Grease a baking dish.
  6. Add 4 tortillas (8 halves) to bottom of the pan, then layer on ½ can refried beans, cheese, ½ veggie mixture, & ½ of “chorizo” meat.
  7. Add a second layer of tortilla, refried beans, cheese, veggies, & meat.
  8. Create 6 “wells” in the mixture & crack an egg into each well.
  9. Bake casserole for ~25 minutes or until egg whites are set.
  10. Serve & top with avocado, cotija cheese, & cilantro.
