Homemade Lamb Gyros + GF Pita Bread Recipe

Lamb Gyros Pita Bread and Tzatziki Sauce Recipe by Megan Limon

These Lamb Gyros with Gluten-Free Pita Bread are a perfect way to bring bold Mediterranean flavors to your kitchen—no takeout required. Tender, seasoned lamb, warm gluten-free pita, and a bonus homemade tzatziki sauce come together for a mouthwatering meal that’s both satisfying and surprisingly simple. Whether you’re cooking for a weeknight dinner or a weekend get-together, this recipe is a guaranteed crowd-pleaser.

Homemade Lamb Gyros + GF Pita Bread Recipe

US Wellness Meats Shopping List: Honey, Ground Lamb, Ground Beef

Servings: 6-8
Prep: 30 min
Cook: 60 min

Ingredients:

Gyro Meat

  • 1 lb ground lamb
  • 1 lb ground beef
  • ¼ c coconut flour
  • 1 tbsp oregano
  • 3 tsp cumin powder
  • sea salt + pepper to taste
  • ½ c sliced cherry tomatoes
  • 1 c shredded lettuce
  • 1 c feta cheese
  • 6-8 gluten-free pita bread
  • 1 c tzatziki sauce

Instructions:

  1. Preheat oven to 325 degrees F.
  2. In a mixing bowl, mix ground lamb and beef with spices.
  3. Add coconut flour and mix well.
  4. In an 8×8 glass baking dish lined with parchment paper, spread the meat mixture.
  5. Bake for 60 minutes until the meat thermometer shows 165 degrees F.
  6. Allow the meat to rest for 30 minutes.
  7. While the meat is cooling, start making homemade tzatziki sauce (using the recipe below).
  8. While the tzatziki recipe is resting in the fridge, start making the gluten-free pita (using the recipe below).
  9. Once the meat has rested and cooled, slice the meat into thin strips and place it in a frying pan.
  10. Brown each side, then allow the meat to rest again.
  11. Plate your gyro by placing one pita on the plate, adding meat, tzatziki sauce, shredded lettuce, tomatoes, and feta cheese. Enjoy!
Lamb Gyros Pita Bread and Tzatziki Sauce

Pita Bread

Pita Bread Ingredients:

  • 3 c gluten-free flour
  • 1 ½ c warm water
  • 1 tsp sea salt
  • 1 tbsp honey
  • 1 packet dry yeast

Pita Bread Instructions:

  1. In a bowl, add warm water and stir in the honey to dissolve it.
  2. Stir in the yeast and allow the mixture to proof for 5 minutes.
  3. While the yeast is proofing, combine flour and salt in another bowl.
  4. Once the yeast is done, add it to the flour and mix it to fully incorporate it.
  5. Cover the dough for 20-25 minutes in a warm space.
  6. In a lightly greased pan, pour in coconut oil or olive oil over medium heat.
  7. Lightly flour a flat surface on parchment paper and scoop ½ c of dough into the center.
  8. Roll into a ball and then flatten with a rolling pin on top of another piece of floured parchment paper.
  9. Place each flat pita dough onto the heated, greased pan.
  10. Allow each side to turn lightly golden, about 2-3 minutes per side.
  11. Repeat for the full batch.

Tzatziki Sauce

Tzatziki Sauce Ingredients:

  • 1 cucumber, chopped
  • 1 tsp garlic powder
  • 1 tbsp extra virgin olive oil
  • 2 c Greek yogurt
  • 1 whole lemon, juiced
  • 1 tbsp fresh dill, chopped
  • sea salt to taste

Tzatziki Sauce Instructions:

  1. In a large bowl, place chopped up cucumber, garlic powder, olive oil, and Greek yogurt.
  2. Chop dill and juice one lemon.
  3. Add yogurt mixture and mix well.
  4. Refrigerate up to 4-5 days.
