Ingredients
- 14 lbs US Wellness Meats Beef Back Ribs
- 1 cup dry rub (your preferred BBQ blend)
- ½ cup olive oil
- 4 fresh peaches, sliced
- 1–1½ cups US Wellness Meats BBQ Sauce (plus more for serving)
- Fresh basil sprigs
- Fresh rosemary sprigs
- Water, as needed
- Hickory wood chips for smoking
Instructions
Step 1: Season & Marinate
- Pat ribs dry with paper towels.
- Lightly coat all sides with olive oil.
- Massage the dry rub evenly into the meat.
- Place ribs in a large zip-top bag and refrigerate for at least 24 hours to marinate.
Step 3: Layer with BBQ Sauce, Peaches & Herbs
- In a large roasting pan, place a rack, screen, or foil-wrapped spacer so ribs don’t touch the bottom.
- Pour water into the pan until it just reaches the bottom of the ribs.
- Scatter peach slices, fresh basil, and rosemary into the pan.
- Place one rack of ribs over the fruit and herbs, brushing generously with USWellnessMeats BBQ sauce.
- Repeat layering with ribs, peaches, herbs, and more sauce.
Step 4: Finish Cooking
- Cover the pan tightly with foil.
- Return the ribs to the smoker (or oven) and cook until they reach 200°F or the bones pull away easily.
- Remove from heat, uncover, and let rest for 20 minutes.

Step 5: Serve
- Brush with extra USWellnessMeats BBQ sauce just before serving.
- Slice between bones and serve with smoky peaches and herbs as a rustic garnish.
