USWM Shopping List: Pasture-Raised Chicken Breasts

Ingredients:

  • 3 lbs of Chicken Breast
  • 3 Tbsp of Coconut Oil
  • 1 Tbsp of Toasted Sesame Oil
  • 3 Tbsp of liquid Allulose
  • 1 tsp of Salt
  • 1/2 tsp of Garlic Powder
  • 2 inch piece of fresh grated Ginger
  • Juice of 1 Lime
  • 1 Tbsp of fresh Chives

Cooking Instructions:

Combine all ingredients and marinate chicken for at least 2 hours. If chicken breasts are on the larger side, you may want to butterfly them. Take chicken out of the refrigerator at least 30 minutes before grilling. Grill on medium heat for about 4 minutes a side; internal heat should reach about 155° Fahrenheit.

I enjoy serving (and eating) this meal with grilled baby Bok Choy. I slice the baby bok choy in half and marinate them in coconut oil and salt for at least 30 minutes. They cook pretty quickly, only needing about 5 minutes on the grill. Take them off after they begin to turn brighter green and slightly wilted.
