Greek Salad w/ Grilled Chicken Recipe

Ingredients for the Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper to taste

Ingredients for the Greek Salad:
- 3 cups chopped Romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese (optional)
Ingredients for the Dressing:
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken breasts and coat evenly. Marinate for at least 15 minutes or up to 2 hours in the refrigerator.
- Preheat the grill or grill pan to medium-high heat.
- Grill chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove from heat and let rest for 5 minutes before slicing.
- In a large bowl, combine Romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese (if using).
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve the salad topped with sliced grilled chicken.
