Everyone has a favorite food growing up. For some it might be grilled cheese, or mac and cheese. Others might love steak and taters or bacon and scrambled eggs. Favorite foods are as varied as the people who enjoy them. One childhood favorite on many people’s list is the chicken tender. Whether it’s grilled, baked or air fried, these tasty treats are a sure-fire winner with most children and adults. Add to it the numerous dipping sauces available and there’s no wonder why it’s on nearly every restaurant menu.

Of course, if you want to make the healthiest, most flavorful meal for the family, start with all-natural ingredients. US Wellness Shopping List: Pasture-raised Chicken Tenders

Ingredients

  • 1 can full fat coconut milk
  • 1 T apple cider vinegar
  • 1-2 # chicken tenders
  • 1 1/2 cups pecans
  • 1 T chili powder
  • 1 T smoked paprika
  • 1 T cumin
  • 2 eggs (Omega-3)

Instructions For Gluten Free Pecan Crusted Chicken Strips

  1. Preheat oven to 425 F.
  2. Whisk ~1c coconut milk with 1T apple cider vinegar. Add chicken and marinate 1-2 hours in refrigerator.
  3. In a food processor add: 1½ cup pecans, 1 T chili powder, 1 T smoked paprika, 1 T cumin powder, S&P
  4. Blend until pecans reach breadcrumb-like texture. Put chopped pecans in a bowl.
    In a separate shallow bowl whisk 2 eggs.
  5. Remove chicken tenders from marinade. Dredge each tender in this order: 1: eggs 2: pecan crust
  6. Repeat steps until all tenders are covered.
  7. Place pecan chicken on a sheet tray. Bake 12-15 minutes or cooked through (165 F).
