The term roulade originates from the French work rouler which means “to roll”. A roulade is a dish of filled rolled meat or pastry. Roulade can be savory or sweet, and is traditionally found in European cuisine.
Follow along below for a savory Roulade recipe from our February 2023 Featured Chef Helen Hundertmark. Helen’s German Style Rouladen is a delicious Flank Steak filled with an array of tasty bits rolled together to create the ultimate comfort food.
German Style Rouladen

USWM Shopping List: Grass-Fed Flank Steak, Sugar-Free bacon
Ingredients
- 1 lb flank steak
- Bacon
- Onion
- Cornichons
- Mustard to your liking
- Spices: sea salt , pepper and sweet paprika
- Tooth picks and kitchen twine to roll up and keep the meat together
Instructions
- It is critical that the flank steaks are very flat so that they can be easily rolled up and cooked evenly! To achieve this, we pounded them.
- Next, we seasoned with salt, pepper and sweet paprika, and spread our favorite mustard onto the meat. We really like Löwensenf but any one will work.
- Finely chop bacon, Cornichons, and onion and spread them onto the meat evenly and as much as you like. Just make sure it’s not too much because you still want to be able to roll them.
- Carefully roll up and fasten with kitchen twine and toothpicks
- Heat up a Dutch oven and sear the roulades until they are browned on each side.
- Add water so that the meat is half covered, put on the lid and let them simmer for 2.5-3 hours.
- When they are finished cooking, you can eat the roulades with the broth that was created during cooking
