Garlic Butter Steak Bites and Roasted Potatoes Recipe

one-pan meal. Perfect for a cozy weeknight dinner or a casual weekend meal.

Ingredients

Potatoes

● 12 oz assorted fingerling potatoes, cut in half lengthwise
● 2 Tablespoons unsalted butter
● ½ teaspoon onion powder
● ¼ teaspoon kosher salt
● ¼ teaspoon black pepper

Steak Bites

● 3 – 6 oz Beef Top Sirloin Butt Steaks, cut in 1 ½ – 2 inch cubes
● 4 Tablespoons unsalted butter, divided use
● 1 teaspoon Dried Parsley
● ½ teaspoon Kosher Salt
● ¼ teaspoon Black Pepper
● 3 Garlic cloves, minced

Instructions

  1. Preheat the oven to 350˚F and heat a large skillet over medium heat on the stovetop
    with the butter for the potatoes.
  2. Add the potatoes and season with onion powder, salt, and pepper. Toss to coat, and
    then arrange the potatoes, cut side down, in the skillet in a single even layer.
  3. Let the potatoes cook for about 2-3 minutes, until they start to brown, and then transfer
    the skillet to the oven to finish cooking for an additional 8-10 minutes.
  4. While the potatoes are cooking, season the steak bites with the dried parsley, salt, and
    pepper.
  5. Remove the potatoes from the oven and place them on a plate to rest. Melt 2
    Tablespoons of the butter for the steak bites in the skillet.
  6. Add the steak bites to the skillet in a single layer and let them cook on the stovetop over
    medium heat for 2-3 minutes without touching, until browned.
  7. Flip over and continue to cook until browned on the other side, an additional 2-3
    minutes.
  8. Reduce the heat to medium-low and add the remaining butter with the minced garlic and
    potatoes.
  9. Let the butter melt and toss everything together to coat in the garlic butter. Serve.
