Ingredients

1 tsp salt

1 tsp pepper
-
1 tbsp extra virgin olive oil (EVOO)

3 tbsp unsalted butter
-
1 shallot, peeled and quartered
-
2 garlic cloves, peeled and lightly crushed
-
5–6 sprigs fresh thyme

Instructions
Step 1: Prep the Steak

Pat the steak dry and season both sides with salt and pepper.

Let sit for 10–15 minutes at room temperature.
Step 2: Sear the Steak
-
Heat 1 tablespoon EVOO in a large stainless steel skillet over medium-high heat.

Once the oil begins to smoke, add the steak.

Sear for about 3 minutes (slightly longer for bone-in), flipping every 30 seconds to ensure even cooking and a nice browned crust.
Step 3: Butter-Baste

Push the steak to the back of the skillet. Add 3 tablespoons butter to the front of the skillet.

Once melted and foaming, add shallot, garlic, and thyme sprigs.

Tilt the skillet so the butter, oil, and meat juices pool toward the handle.

Continuously spoon the mixture over the steak, focusing on less browned areas, and flip the steak every 30 seconds.

Cook until the internal temperature reaches about 125°F (about 1–2 minutes; slightly longer for bone-in).
Step 4: Rest and Serve

Remove the steak from the skillet and transfer to a cutting board. Tent loosely with foil and rest for 10 minutes.

Strain the skillet mixture into a small bowl, keeping aromatics for extra flavor.

Slice steak thinly against the grain and serve with the aromatic butter infusion.
