Ingredients
For the Chimi Sauce
- ½ Cup of Organic Ketchup, Homemade is Best
- ½ Cup of Organic Mayonnaise, Homemade is Best
- ¼ Cup of Fresh Pressed Organic Orange Juice
- 1 TBSP of Organic Worcestershire Sauce
Seasoning for the Meat
- 1 Large Organic White or Red Onion
- 1 Clove of Organic Garlic
- 1 Organic Green or Red Bell Pepper
- 2 TSP Celtic Grey or Himalayan Pink Sea Salt
- ½ TSP Fresh Cracked Organic Pepper
- 1 TBSP of Organic Worcestershire Sauce
- 1 LB of Organic Ground Bison (Buffalo)
For the Chimi Burger
- 3 TBSPS of Organic Olive Oil
- 1 Large Organic White or Red Onion Cut into Rings
- 1 Large Tomato Cut into Slices
- 2 Cups of Organic Shredded Green or Purple Cabbage
- 1 Cup Organic Pickles Cut into Slices
- 1 TSP Organic Sesame Seeds
- 6 Organic Hamburger Buns or 6 Organic Romaine Leafs
Instructions
How to make the Chimi Sauce
- Mix the ketchup, mayonnaise, orange juice and Worcestershire sauce. Set aside and keep chilled in the refrigerator until ready to use.
How to make the Chimi meat patties
- Pulse onion, garlic, bell pepper, salt, pepper and Worcestershire sauce in a food processor until you obtain a coarse paste like consistency.
- Mix the seasoning paste with the meat. Divide the meat into 6 portions and form 6 round patties
How to put together the Chimi
- Brush a stove-top grill with some of the oil and heat over high heat. Grill the patties, rotating until they are cooked to desired finish, then set aside.
- Reapply oil to the grill and grill onions and tomatoes until they obtain a nice char.
- Reapply some oil to the grill and warm up the bread until it reaches a golden, crisp hue.
- Place meat, tomato, onions, cabbage and pickles between the buns, garnish with the Chimi sauce and sprinkle with sesame seeds.
