Ingredients

6–8 tablespoons extra-virgin olive oil

1–2 tablespoons minced garlic

1–2 teaspoons salt

1–2 teaspoons pepper

1–2 cups flour (for coating; cassava flour works great for gluten-free)

1 whole organic lemon

1–2 teaspoons dried parsley

1 cup organic chicken bone broth

Instructions

Prep the Chicken:

Fillet the chicken breasts if too thick to ensure even cooking.

Season generously with salt and pepper.

Coat the Chicken:

Place flour in a bowl and coat each chicken breast thoroughly.

Pan Fry the Chicken:

Heat 2–3 tablespoons butter and 3–4 tablespoons olive oil in a large pan over medium-high heat.

Pan fry chicken 3–4 minutes per side until golden brown. Transfer to a plate and set aside.

Prepare the Sauce:

Reduce heat to low, add minced garlic, and sauté until softened.

Add a little more butter and oil, then pour in 1 cup chicken bone broth.

Simmer and reduce by half, stirring frequently to create a light gravy.

Combine Chicken and Sauce:

Return chicken breasts to the pan and coat them with the reduction.

Squeeze a fresh lemon over the chicken and mix lightly.

Cook until internal temperature reaches 165°F.
