Bone broth based soups help to restore our energy, vitality, and nutrient levels to give us what we need to thrive My girlfriend requested I create a chicken tortilla soup recipe since it’s one of her favorites – so here it is.
Chicken Tortilla Soup

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Servings: 6-8
USWM Shopping List: Chicken Thighs, Bone Broth, Ghee
Ingredients
28 ounces crushed tomatoes
48 ounces bone broth
1 onion
2 large zucchini
2 bell peppers
1/2 bunch cilantro
3 corn tortillas
2 tablespoons ghee
1 pounds chicken thighs
Top w/avocado, fresh lime, and cilantro. (You can also add a dollop of plain greek yogurt)
Seasonings:
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons paprika
1 teaspoon dried oregano
1/2 teaspoon chiptole powder
1 teaspoon garlic powder
Salt & pepper to taste
Directions
1. Dice up all vegetables and cook over medium heat in 1 tablespoon of ghee
2. Once vegetables are tender, add in bone broth, tomatoes, diced chicken, and seasonings.
3. Combine well and bring up to a simmer
4. While soup cooks, slice up tortillas into strips and cook in 1 tablespoon of ghee on high heat until crispy
5. Serve soup topped w/tortilla strips, avocado, fresh lime, & cilantro
