Tell us about yourself:

I am a resident of Long Island, NY with my husband and son.  I create dishes that are a reflection of the home we have built.  It is one big happy melting pot of ethnicities and cultures.  I am Jamaican and Indian.  My husband is Spanish, Italian, and Dutch.

How did you get involved in cooking?

Cooking started as a cultural experience.  I immigrated from Jamaica W.I. at the age of 4.  By the age of 7 I was able to create small dishes un-supervised.  The passion for cooking started almost immediately.  I was always looking for ways to blend my Caribbean style of cooking with other national cuisines I was constantly discovering in this melting pot I called home.

Describe your cooking style:

My cooking style derives from the earth as much as possible. My Jamaican culture is my foundation; it influences my techniques and flavor profile. If I had to give it a name it would be Vibrantly Simple.

How did you learn about grass-fed meats?

The importance of the quality of meats started while I was pregnant with my son in 2013.  I saw a Facebook post from “A Tribe Beyond Blessed” (formerly We Are Primal Two).  The page belonged to a High School classmate and her husband discussing the Paleo Diet.  I quickly immersed myself into wanting to learn how to best feed my husband, myself, and ultimately my son.  I currently approach eating buy consuming what is best for our bodies.  The food quality is my main focus (i.e. organic, non-gmo, pasture raised, grass-fed, grass finished, local, and growing my own food).

What is your favorite recipe featuring grass-fed/pasture raised meat?

Duck Confit by Primal Palate.

You’re stranded on a desert island; luckily you’re stranded with your top 5 ingredients and must-have kitchen tool:

Ingredients: Ghee, Garlic, Lemon, Lobster, and Thyme

Tool: Knife

Best cooking secret/tip/piece of advice you’ve learned:

Always double your garlic!

Anything else you want to share?

The question I get asked the most is, “how do I find the time to cook gourmet meals after working a full kick-ass day of Accounting”

simply put… cooking is my glass of wine after a long day!
