Tell us about yourself:
Hello! What initially started as a hobby documenting recipes back in April 22’ has brought me to the landing page of US Wellness Meats’ Featured Chefs! None of this would be possible without the support of my wife documenting and editing every step of the way. In short, I am a full time husband & father, Real Estate Professional by career & lastly, FOOD & FITNESS enthusiast dreamer. My goal is to have healthy conversations and inform my audience on the power of food as medicine and the importance of movement! We must break away from the convenient (deceiving) and highly toxic industrialized food complex that is poisoning our and future generations.
How did you get involved in cooking?
I am Greek American and cooking has been a STAPLE growing up (you don’t skip Grandma Maria’s Sunday dinners). I knew how to cook before I could drive a car. My passion for quality ingredients first started when the wife and I embarked on our pizza baking journey – my goal was to source the highest quality “organic” ingredients to make the best pies.
Describe your cooking style:
Pick your protein (beans do not apply!) – Source the best quality and SALT to taste. Grilled or braised and keep things simple. Cooking takes refinement and time. Skip the salad and try ending every meal with a serving of Fruit!
How did you learn about grass-fed meats?
This all dates back to 2013 when my Sister blessed me with the following books: Perfect Health Diet by Paul Jaminet and Nourishing Traditions by Sally Fallon. These books have forever changed our lives and they have become a compass through the world of health.
What is your favorite recipe featuring grass-fed meat?
I definitely have a special bond with my Smoker. However, there is no greater versatility for me than braised Chuck Roast. Throw in some pasta, mashed potatoes or pull a 180 and call it taco night!
You’re stranded on a desert island; luckily, you’re stranded with your top 5 ingredients and one must-have kitchen tool:
Lamb shoulder, salt, ghee, onion, bone broth. Tool: Cast Iron Dutch Oven.
Best cooking secret/tip/piece of advice you’ve learned:
Dry brine your protein for the pro move – works well with any method, low & slow, hot & fast or mix and match.
What’s your favorite quote/song for culinary inspiration (if any)?

No matter where you are in your health journey, it all starts in the kitchen. Start with the basics (that’s all you really need) and source the best quality food you can find. Cook with your children, cook with your spouse or cook with yourself and find peace.
