IN THE KITCHEN WITH JENN LEYTON
Tell us about yourself:
I’m Jenn, a home chef from New Jersey. I am an art teacher, and mom of two. After a celiac and Hashimoto diagnosis in November 2022, I began cooking gluten and dairy free foods. My recipes are favorite meals turned allergy friendly. In my spare time, I enjoy hot yoga, and hiking.
How did you get involved in cooking?
Cooking has been a passion of mine from a young age. I can fondly remember helping my mother and grandmother in the kitchen as a child, and watching Iron Chef when I returned home from elementary school. As I grew older, I truly loved entertaining others and sharing my food with them. I believe that food has a profound impact on bringing people from all walks of life together.
Describe your cooking style:
My food is very much comfort driven with an emphasis on being allergy friendly. When I was diagnosed with two autoimmune diseases (specifically celiac), I knew that I had to make major lifestyle adjustments for the sake of my health. At the same time, I did not want to miss out on all of the delicious meals I love. My dishes are a celebration of food without limitations and a reminder that you can still enjoy yourself with food allergies!
How did you learn about grass-fed meats?
Over the last year, I have done a complete overhaul of the food that comes into my house. Not only do we focus on being allergy friendly, but we also focus on limiting exposure to foods that can cause health issues in general. Upon doing my research of the healthiest meats, I have found that grass-fed is the safest and healthiest choice for myself and my family.
What is your favorite recipe featuring grass-fed meat?
I love Osso-Bucco! It is a timeless dish that you can eat at any time of the year.
You’re stranded on a desert island; luckily, you’re stranded with your top 5 ingredients and one must-have kitchen tool:
If I was on a desert island, I would be sure to have grass-fed meat, salt, two fresh veggies, some garlic, and a knife!
Best cooking secret/tip/piece of advice you’ve learned:
It may sound cliche, but the best tip I can give is to always cook like you are cooking for someone you love…it always tastes better!
What’s your favorite quote/song for culinary inspiration (if any)?
“You learn a lot about someone when you share a meal together.” – Anthony Bourdain
