Tell us about yourself:

Hi there, I’m Erica! I am a functional dietitian & personal trainer with a passion for helping others go from surviving to thriving with their health! Outside of work, I am either whipping up something tasty in the kitchen, watching too much reality TV (we all have our guilty pleasures (; ), or exploring the good outdoors with my family!

How did you get involved in cooking?

I first started experimenting in the kitchen just out of interest in fueling my body more for sports & activities. I then went on to study dietetics, took a few cooking courses, & realized I LOVED creating my own recipes.

Describe your cooking style:

I don’t believe in food ever being boring. For every recipe I create I focus on these 3 things:
1. nutrient-dense
2. unique & creative
3. make it TASTY!!!

How did you learn about grass-fed meats?

I first learned about grass-fed meats while I was doing some functional training during my dietetic internship. I really started paying attention to nutrient quality & nutrient density at that time. Then when I started posting recipes to food social, I saw they were partnered with U.S. Wellness Meats & loved all that they stood for, as well as how incredible their meat is!

What is your favorite recipe featuring grass-fed meat?

A grass-fed beef filet mignon with my bacon & veggie succotash!

You’re stranded on a desert island; luckily, you’re stranded with your top 5 ingredients and one must-have kitchen tool:

#1: beef liver – for it’s nutrient density
#2: cauliflower rice – truly a veggie staple
#3/4: miso & redmond’s smoked salt – elevates any dish
#5: dark chocolate – must have a sweet treat
kitchen tool: a good quality cast-iron skillet!

Best cooking secret/tip/piece of advice you’ve learned:

If at first the recipe doesn’t succeed, always try again! There are countless times a recipe will turn out meh the first go round, but those “fails” help you to tweak the recipe to perfection the next time! I love that I am constantly learning new things in the kitchen – whether it be how to better cook something, different flavor combinations, or just a brand new recipe!
