Chamomile Apricot Energy Bites Recipe

“I love quick energy bites to support the body in between meals, especially when they have a childhood nostalgic flare. I grew up spending many days in the pool, bathing in the California sunshine. My best friend had this gorgeous white and blue pool that looked like it came from Greece. A vibrant apricot tree hung over the pool, and the fruit was oh-so-easy to grab for quick energy bites. I remember always having a little feud with her red dachshund about who would get the apricot that was lowest on the tree.” – Megan Limon

Chamomile Apricot Energy Bites Recipe

US Wellness Meats Shopping List: Raw Honey

Ingredients for Energy Bites:

  • 12 organic dried Turkish apricots
  • 6 organic dried Turkish figs
  • 1/4 cup raw almond butter
  • 1/4 cup coconut flour
  • 1 tbsp coconut oil
  • 1 tbsp dried chamomile (to make fruit soak)
  • 1/4 cup unsweetened shredded coconut (for rolling each bit)
  • Raw honey for drizzle

Instructions for Energy Bites:

  1. Place dried chamomile in a mug with a tea strainer and steep in hot water for 5-10 minutes with lid on.
  2. Chop up dried apricots and figs.
  3. Place chopped fruit into a bowl and pour strained chamomile tea into bowl.
  4. Allow to soak while you are prepping the other ingredients.
  5. In another bowl, mix almond butter, coconut flour, and coconut oil together. It will look like it isn’t enough, but it will be perfect.
  6. Add warm soaked fruit and mash together in bowl with a wooden spoon. You can use a food processor, but it’s not necessary.
  7. Once the fruit and nut mixture is almost paste consistency, scoop up individual pieces and roll into balls.
  8. Roll balls in shredded coconut.
  9. Drizzle with raw honey.
  10. Place in a container to refrigerate for 1-2 hours. Enjoy!
