US Wellness Meats Shopping List: Ground Beef, Ground Lamb
Ingredients for Gyro Meat
- 1lb USWM ground beef
- 1lb USWM ground lamb
- 6g/2tsp garlic powder
- 8g/4tsp onion powder
- 3g/3T dried oregano
- 2g/2tsp dried thyme
- 2g/2tsp dried rosemary
- 2g/1tsp ground cumin
Gyro meat Instructions
- Preheat the oven to 300°F/149°C
- Line an 8″ or 9″ loaf pan with parchment paper. Or, use a silicone loaf pan.
- In a food processor or blender, add your meats and herbs. Process until the texture is like a paste, about 1-2 minutes, stopping to scrape down the sides as necessary.
- Transfer the meat mixture into the lined pan. Press down to compact it as much as possible and get out any air bubbles.
- Bake for 60 minutes.
- When the meat is done, remove from the oven and drain the fat.
- Remove the gyro meatloaf from the pan and cool completely on a rack. Cover, then refrigerate until fully cold.
- Thinly slice the meatloaf.
- Put the gyro meat in a single layer and pan fry for 2 minutes-ish per side, until browned.
Ingredients for MSB Flats (carnivore pita)
Servings: About 20 flats
- 180g/1 2/3C milk protein powder
- 400g/12oz cream, farmer, or ricotta cheese, softened
- 130g/1/2C unsalted butter, melted/softened
- 5 eggs
- 3g/1tsp beef gelatin powder
- 5g/1tsp glycine
- 3g/1tsp cream of tartar
- 12g/2.5tsp baking powder
- 3g/1/2tsp baking soda
Carnivore Pita Instructions
- Preheat oven to 325°F/165°C
- Bring cheese and butter to room temperature to soften.
- Gather all ingredients. I pre-measure for quick assembly.
- Measure protein powder, glycine, baking soda, and cream of tartar in a sifter to use later in the recipe.
In a large bowl…
- To your softened cheese, add butter.
- Using an electric mixer, mix well.
- Add in one egg at a time, 5 total.
- Mix well after each.
- Add baking powder and gelatin and mix well.
- Sift protein powder/dry mixture over wet ingredients and gently stir and fold together. Do not overmix.
- Take a small handful, roll, and smush it into a smooth ball. For the flats, it’s ok to mix the ingredients altogether. That helps them with the shape and texture.
- Place on parchment paper or a silicone mat-covered cooking sheet. Slowly flatten to 1/8″
- Bake 30-35 minutes-ish depending. Keep an eye on them starting at 30 minutes.
- Remove from oven, remove from pan.
- Allow to cool fully before storing.
- Heat in the microwave for 10 seconds to make it pliable and bendy.
Ingredients for Tzatziki Sauce
- 130g/1C sour cream or crème frâiche
- 2g/1tsp garlic powder
- 2g/1tsp onion powder
- 1.5g/1/2T dried dill weed
Tzatziki Instructions
- Mix all ingredients together.
- Top gyros and enjoy!
