California Caprese Chicken Skillet Recipe

USWM Shopping List: Raw Mozzarella Cheese, Pastured-raised Chicken Breast,

Ingredients – Balsamic reduction
- 1/2 cup Balsamic Vinegar
- 2 Tbsp Lakanto Classic Monkfruit Sweetener (with Allulose)
- 1 Water, to thin as needed
Ingredients – Chicken
- 8 Skinless Chicken Breast, ~4-5 oz
- 1 – 2 Tbsp Primal Palate Amore, or Italian seasoning, garlic powder, onion powder, salt, & pepper
- 1 Salt and Pepper
- 8 Fresh Mozzarella, thick slices
- 8 Tomato, thick slices
- 2 Avocado, 2-3 slices/breast
- 1 fresh Basil
- 1 Red Pepper Flakes
Instructions:
- First prepare balsamic reduction, by whisking together vinegar & sweetener.
- Bring the mixture to a boil, then reduce to a simmer for 8-10 minutes to allow to thicken.
- Remove from heat & allow to thicken while cooking remaining ingredients – add water if becomes too thick.
- Heat a skillet with a little oil over medium heat.
- Season chicken with amore seasoning, salt, & pepper.
- Add chicken to skillet; sear the on both sides for about 3-4 minutes or until golden brown.
- Reduce heat to medium heat, then add lid & cook chicken until done.
- Add mozzarella to chicken – option to broil for 3-5 minutes.
- Once chicken is done, top with slice of tomato, slices of avocado, & drizzle with balsamic reduction.
- Garnish with basil & red pepper flakes.
- Serve with a side of veggies.
