Beef Wellington Carissa Tang Whole

Beef Wellington is a luxurious dish that features a tender beef fillet coated with a rich mushroom duxelles, wrapped in prosciutto, and encased in flaky puff pastry before being baked to golden perfection. The beef is first seared to lock in its juices, then layered with finely chopped mushrooms sautéed with garlic, thyme, and white wine to create a deeply flavorful filling. Wrapped snugly in pastry and brushed with egg yolk for a crisp finish, it is baked until the crust is beautifully golden while the beef remains succulent and pink inside. Served with a side of roasted vegetables or a velvety red wine sauce, Beef Wellington is an elegant centerpiece perfect for special occasions.

Enjoy this Carissa Tang creation using the best quality ingredients. US Wellness Meats’ 100% grass-fed Beef Tenderloin is out of this world delicious!

Ingredients:

  • US Wellness Meats 100% Grass Fed Filet Mignon (9oz)
  • Puff pastry
  • 4oz Prosciutto
  • Deuxelles (1 pound shiitake mushrooms, 1 cup of onions, 4 cloves of garlic, 2 sprigs of fresh thyme, 1/2 tsp sea salt, and black pepper)
  • 1 tbsp mustard
  • 1 egg (egg wash)

Instructions:

  1. Sear your filet mignon for 3 minutes on each side to release juices. Let cool, and set aside.
  2. Add avocado oil or butter to a heated pan. Add your mushrooms, onions, and herbs. Cook for at least 10 minutes until all the extra water cooks off.
  3. In a blender or food processor, blend your mushroom mixture until it forms a smooth paste. Let cool and set aside.
  4. Pat your filet mignon dry, brush on mustard, and wrap it tightly in prosciutto using cling wrap. Refrigerate your filet mignon for 15 minutes.
  5. Begin cutting four strands of your puff pastry and set aside. Roll out the rest of your puff pastry, spread an even layer of your mushroom duxelles 1 inch from each side, and add your prosciutto-wrapped filet mignon.
  6. Roll your puff pastry tight, add your four strands on top as a design, and refrigerate for at least 20 minutes.
  7. Preheat your oven or air fryer at 390°F. Brush your mini beef wellington with egg wash and cook for 12 minutes,
  8. flipping halfway. Enjoy!
