Beef Stroganoff Recipe for Postpartum

This Beef Stroganoff is a quick, nourishing meal, ideal for mother’s during postpartum. Use high quality grass-fed beef for best nutrition content.

Beef Stroganoff Ingredients:

1 pound ground beef
3 tbsp coconut or avocado oil
2 tbsp arrowroot starch, divided
1 clove garlic + 1 small onion (I omit onion)
1 cup sliced mushrooms
1 cup sliced heirloom potatoes
3/4 cup beef broth
1/2 cup coconut cream
2 tbsp coconut aminos
2 tsp apple cider vinegar
1 tsp mustard
1 tbsp fresh parsley, chopped
Sea salt + pepper
1 box of cavassa flour pasta

Beef Stroganoff Instructions:

1. Cook ground beef in a pan and season with salt and pepper.
2. Fully cook, set aside and add 1 tbsp of arrowroot starch until coated.
3. Heat oil in a large pan over medium heat and toss in garlic and onions until translucent.
4. Add mushrooms and sliced potatoes and cook until softened. Turn down to simmer, add in 1 tbsp of arrowroot and stir.
5. Pour in broth, cream, vinegar, aminos and mustard. Stir to combine and allow to simmer for 3 minutes until thickened.
6. Add ground meat back into the pan and mix well. Simmer for another 2-3 minutes.
7. In a pot, boil water and cook pasta until al dente. Drain pasta and plate.
8. Simply place pasta on plate and then the meat mixture. Top with fresh parsley. Enjoy!

NOTES:

Want to freeze? Simply cook meat mixture first and freeze. Cook the pasta later as needed.
