Beef Osso Bucco Recipe

Sliced beef shank (or beef osso bucco) are nutrient-packed power foods that we truly enjoy around here. So, when Jenn brought us her Osso Bucco recipe, we were more than happy to try it out. This one is simple to follow, rich, and oh-so tender! It’s definitely worth a try any day of the week.

Osso Bucco

USWM Shopping List: 2lbs Grass-fed Beef Shank

Ingredients:

  • 2lbs Grass-fed Beef Shank
  • 1c Onion (Diced)
  • 1c Celery (Diced)
  • 1c Carrot (Diced)
  • 1/8c Garlic (minced)
  • 1c @bonafideprovisions beef bone broth
  • 1.5c Red Wine (@alamoswines Malbec)
  • 1/4c @muirglen Tomato Sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1 tbsp. corn starch
  • 1/2 c water
  • 2 tbsp. olive oil
  • parsley (full stems with no leaves – bound)
  • parsley leaves (1 tbsp.- chopped)

Instructions:

  1. Use 1 tbsp. olive oil on a cast iron pan & heat on medium-high.
  2. Take veal out of package and put salt on each side.
  3. Place veal in hot cast-iron and sear each side until brown (approx. 2-3 mins on each side).
  4. Remove meat from pan and set aside.
  5. Add remaining olive oil to pan.
  6. Add garlic, carrot, onion, and celery to pan & cook for 4-5 minutes, stirring frequently.
  7. Deglaze pan with all of red wine.
  8. Turn heat to low and add broth and tomato sauce.
  9. Add cumin, paprika, salt, and garlic powder.
  10. Simmer for 10 minutes.
  11. Place meat back in pan.
  12. Place parsley stalks in between meat
  13. Set oven to 350 degrees.
  14. Cover pan entirely and allow to cook for 2-2.5 hours (or until meat pulls apart with fork).
  15. When ready to serve, uncover meat and broil on high or 3-5 minutes to brown top.
  16. Add cornstarch to hot water and stir until dissolved.
  17. Remove meat from pan, and thicken pan sauce with cornstarch mixture (stirring frequently)
  18. Replace meat on top of sauce.
  19. Garnish with fresh parsley.
