Avocado Smoked Salmon Bowl with Cauliflower Rice is a grain-free spin on popular Poke Bowls!

This Paleo Poke bowl is made grain-free and low carb by swapping rice with cauliflower and soy sauce with coconut aminos. The cauliflower rice gets topped with smoked salmon and layered with spiralized cucumber for a refreshing bite. As a plus, avocado adds a creamy texture and healthy fats to the dish!

The bowl is topped with a spicy homemade dressing made from just four ingredients. Feel free to adjust the amount of sriracha to your taste buds. Note: Wasabi would be a perfect substitute if you want to bring in even more heat.

To make the recipe your own, add a variety of vegetables you love to eat along with your favorite fish. Raw or cold fish both make great protein additions.

Yield: 1 serving

Ingredients

For the Bowl:

½ lb. smoked salmon

2 cups cauliflower, riced

2 cups cucumber, spiralized

½ avocado, sliced

Salt and pepper, to taste

1 T coconut oil

For the Sauce:

2 T freshly squeezed lemon juice

1 T coconut aminos

2 t sriracha

1 t minced ginger

 

 

How to Make It

  1. Preheat a skillet to medium heat. Add coconut oil, riced cauliflower, salt and pepper. Cook 5-7 minutes, stirring occasionally until cauliflower rice is softened.
  2. Transfer cauliflower rice to a bowl. Top with spiralized cucumber, smoked salmon and sliced avocado, layering the ingredients evenly on top.
  3. In a small ramekin, whisk together the ingredients for the sauce. Drizzle the sauce over the bowl and enjoy!
