April 2020 Featured Chef Monica Little shares with us a recipe using the hottest kitchen gadget of the year… the air fryer! Monica is sharing her Air Fryer Rotisserie Chicken Recipe, and we are sure glad she is!
“This is the easiest and best way to cook a whole chicken! Just create a spice rub, give the chicken a little love, and let it roast in the air fryer – that’s it! You’ll get a perfectly cooked chicken with crispy skin, juicy meat and so much flavor from the spice blend.
Let’s talk about air fryers – I use and LOVE the Big Boss Air Fryer that you can buy on Amazon. We use this one specifically because it’s made with glass! If you use an air fryer made from plastic, the chemicals from the plastic leach into the food you are cooking when the plastic is heated up. Even if it’s BPA free, those plastics are still not as safe as they sound. It’s best to avoid all the potential chemicals and go for a safe, glass option! This is the same reason that you should transition to glass Tupperware instead of plastic – always avoid microwaving or heating up any plastic!
You’ll also need a meat thermometer. This is a relatively new addition to our kitchen and it’s a life saver to prevent overcooking meat!

Air Fryer Rotisserie Chicken

USWM Shopping List: Whole Chicken
Ingredients

1 whole chicken from US Wellness Meats (3.5-4 lb chicken)

2 tbsp avocado oil
-
1 1/2 tsp pink Himalayan sea salt
-
1/4 tsp black pepper
-
1 tsp organic garlic powder
-
1 tsp organic paprika
-
1/2 tsp organic thyme
-
1 tsp organic Italian seasoning
Directions
- Thaw, rinse, and pat the whole chicken dry.
- Mix together avocado oil and all spices.
- Rub the spice mix over the chicken and underneath the skin of the chicken breast.
- Air fry on 350 degrees for 50 minutes breast side down, then 10 additional minutes breast side up.
- Using a meat thermometer, make sure the deepest part of the chicken breast has an internal temperature of 165 degrees F.
- Remove from the air fryer, let rest for 10 minutes then carve and serve!
