These crisp and tender spiced duck wings make for flavorful game day munching!
Looking for a twist on the same old chicken wings? Try duck wings instead! Duck meat is darker and richer than chicken. Because duck wings are tougher than chicken, it takes a little extra prep to tenderize and braise them properly. But the result is a crisp and tender appetizer that makes the extra work totally worth it!
Free-range duck meat is rich in protein, niacin, iron and zinc. Ducks free to forage on the land are higher across the board in vitamins and nutrients because they eat a healthy, natural diet.
To make these spiced duck wings, start by choosing your favorite chicken or duck stock. Bone broth would also be a great choice. Add the duck wings to the broth in a heavy pot and bring to a boil. Then cover the pot and simmer the wings over low heat for 2-3 hours, or until the meat is so tender it’s ready to fall off the bones.
Next, remove wings from the pot and pat dry using a clean kitchen towel. In a large bowl, toss wings with a seasoning of fennel, cumin, and cinnamon and bake at high heat for 15-20 minutes to help them crisp up. If you like saucy wings, baste them with Paleo BBQ sauce and put them back in the oven for an additional 5 minutes. Or just grab a wing bowl and get to town!

Ingredients
2 lbs. duck wings
3 cups chicken or duck stock
1 t ground fennel
1 t cumin
1/2 t cinnamon
1/2 t sea Salt
1/4 t pepper
How to Make It
- Place wings in a large pot and cover with broth. Heat over medium heat until boiling.
- Reduce heat and cover. Cook 2-3 hours, until wings are just about to fall off the bone.
- Preheat oven to 425°F. Use tongs to remove wings from pot and place on a towel. Pat dry.
- Add wings to a mixing bowl and toss with spices.
- Place wings on parchment paper-lined baking sheet and bake 15-20 minutes.
