My first exposure to crispy, greasy, delicious Keto Scotch Eggs was on YouTube. The normal recipe dredges the meat wrapped egg in wheat flour and is then deep-fried. I was left inspired but also wondering how to make a healthier gluten-free and keto version. My second thought was if they can be keto-friendly, can they be simplified further for a carnivore diet?

Three things inspired me to make this recipe. My love for meat, my love for eggs, and my love for a good recipe challenge!

2 Pounds Ground Beef

12 Large Boiled Eggs

  • Preheat the oven to 350°F (175°C).
  • Line two small rimmed baking sheets with parchment

  • Place one boiled egg in the middle of each circle of meat and wrap the meat around the egg, leaving no gaps or holes.
  • Bake about 15 minutes, turn them over, and continue for another 10 minutes, until outside is golden brown. Place under the broiler to finish for 5 minutes for a crispy shell. Serve hot.
